According to a 1992 Federation of American Societies for Experimental Biology study, an unknown percentage of the population may have temporary symptoms—tingling, headache, rapid heartbeat—after eating large amounts (more than 3 grams) of MSG. But a typical serving of MSG-enhanced food includes only half a gram of the stuff.
