You can get a particularly good deal on the Spanish terra cotta dishes called cazuelas. Other handy items: Two baking sheets—I like sturdy restaurant-style half-sheet pans, because they can handle anything from cookies to a roast. I'd also recommend a pie dish and/or a tart pan, a silicone muffin pan, two 9-inch cake rounds, a rolling pin, and a silpat—a silicone baking pad that keeps even the gooiest brandy snaps from sticking to your sheet pan. Buy the rest as you need it.
