When I read a headline like “Cocktail Food Trucks To Boom in 2012” my natural thought is that it doesn’t sound like an idea that many municipal regulations will be friendly to. And, indeed, several grafs into the article the point is conceded: “cocktail trucks will not repeat the boom of food trucks due to legal issues.”
The real truck-related question for 2012, I think, is what happens to the food trucks. Will the truck boom gain momentum as more cities seek to create truck-friendly regulations, or will truck-hating incumbent restaurant operators organize a clampdown?
