Jan. 5, Dinner: Building a Bigger, Better, More Protein-Filled Salad

A similar salad to last night, but I added hard-boiled egg, fresh mozzarella, and potatoes:

It was much more satisfying than the one last night. In fact, I started to get full before I finished.

Also, that’s the homemade seltzer plus orange juice again.

I had hoped to pick up some other ingredients to make something different tonight, but this is what tends to happen to me midweek: I run out of ingredients and/or energy and make the same things again. Maybe tomorrow. This salad was really good though.
